When cutting wood a down spiral compress the tip of the material resulting in a smooth fuzz free edge. The down spiral geometry pushes the material downwards so it is securely held into place on the sacrificial bed eliminating any lifting or chipping of the material. Using a single fluted upward spiral cutter on such material would most likely lift it from the bed leading to a loss of accuracy and cut quality.
